"Various flour and cream confectionery products, bread or cake pastries, weighed and fine flour products, ready - made meals, semi - finished products and small snacks can be produced and sold to customers in home kitchens.
The State Food and Veterinary Service has established simplified requirements for such activities.
Assessing the fact that the home kitchen does not have the capacity to meet all the requirements that large companies have to meet, home production has certain range and quantity limitations, the report said.
• For example, if a loaf of bread or cake weighs more than 250 g, it will be possible to make no more than 5 of them per day at home. (e.g. cakes, pies).
• Bread, pastry, cakes, confectionery, biscuits and other baker's wares of a weight not exceeding 250 g (for example: croissants, buns, gingerbread, muffins, cupcakes, donuts, cakes, etc.) may be produced no more than 100 pieces, and weighed small bread or cake products - biscuits, rusks, Christmas cakes, etc. - not more than 7 kg.
• Appropriate quantity requirements are also provided for meals and meals prepared at home by consumers: meals can be prepared up to 20 portions per day, semi-finished products - dumplings, pancakes, etc. - up to 10 kg, and for small snacks, such as one-bite sandwiches, not more than 100 pieces.
The essential requirements are registration with the SFVS, compliance with hygiene, compliance with food storage and labeling requirements, and proper management of the generated waste. Before registering this activity, inspectors shall assess whether the manufacturer is prepared to prepare food safely, whether his personal medical record confirming authorization to work with food is valid, whether hygiene courses have been attended, whether the manufacturer has self-monitoring documents to prevent unsafe products from entering the market.
Those wishing to produce small quantities of plant products, such as jams, teas, nut mixtures, etc., must also register with the SFVS. Such products may not be produced in domestic kitchens and are subject to other requirements as well as quantitative restrictions."
