“A forgotten patch of spring-sown arugula is bolting. A cucumber hidden among its own foliage is heading toward too fat to eat, its skin starting to discolor. Neither, though, need be a lost cause.
Could the vegetable garden, with past-prime hints like those alongside its bounty of ripe tomatoes, be trying to tell us something, reminding us of its alter ego as a seed garden?
Yes, seed saving is an “old-timey thing that’s fun to experiment with,” said Bill Braun, an organic seed farmer who co-founded the nonprofit Freed Seed Federation in Dartmouth, Mass., “but it’s so much more, too.”
By learning to save seed, he added, we “can start to re-center seed as the heart and soul of how food is grown rather than just one more interesting bit about gardening.”
Seed is our most powerful garden tool, but it isn’t one size fits all. Regionally adapted seed — those from plants farmed over multiple generations in a particular geographic area and climate conditions — can offer additional resilience. In a time of escalating climate pressures, every such advantage is especially welcome.
One way to harness such resilience is to shop from regionally focused, farm-based organic seed catalogs — not ones that buy their seed from places where conditions and growing practices bear no resemblance to yours. Another is to learn to save some yourself.
But which plants are candidates?
“The first question I ask: Is it open-pollinated or is it hybrid?” said Katie Jagger of Saltwater Seeds in Sequim, Wash., a grower of organic seed adapted to the Pacific Northwest. “Otherwise you just won’t end up with what you grew.” Hybrids don’t reproduce true from seed.
Ms. Jagger is also a research assistant at Organic Seed Alliance, a farmer-centric nonprofit providing education, training and research support for growing in organic systems.
She just helped update OSA’s popular online Seed Saving Guide for Gardeners and Farmers, which includes the next question we’ll ask: How is each plant pollinated? Knowing that provides clues to isolation distances required between closely related varieties to prevent unwanted cross-pollination, and also how many plants are needed to avoid what’s called inbreeding depression — when a gene pool of too few individuals diminishes genetic vigor over time.
Self-Pollinator, or Outcrosser?
Self-pollinating crops like bush beans, peas and lettuce have the easiest requirements.
“You can absolutely maintain a variety of peas and beans and lettuce in your backyard with a very small population,” said Ms. Jagger.
Plants known to seed breeders as “strong outcrossers,” such as squash, corn and brassicas, rely heavily on cross-pollination to produce seed, and require greater isolation distances and larger populations.
“Some species — the outcrossers — need a lot of friends,” said Mr. Braun, whose organization collaborates with OSA. For beginners, “saving any seed is good and worthy,” he added, “but for long-term varietal maintenance, there’s more to learn.”
With some winter squash, for instance, there can be mishaps if another variety of the same species is grown in proximity. Even peppers, which are less inclined to outcross, can do so. Unhappy surprises: to find after harvest next year that your next-generation squash was the unpalatable offspring of an inadvertent matchup with a zucchini, or that your 2026 sweet and hot peppers cross-pollinated.
Just because spinach or arugula are strong outcrossers doesn’t make them off limits for backyard seed savers, however.
“It’s pretty unlikely that your neighbor will have arugula going to seed at the same time,” said Ms. Jagger. “And even if it does, it probably won’t really matter if they cross. You’ll just have a diverse population of arugula, which could be great.”
Cilantro, too, is inclined to outcross, but Mr. Braun recommends it for its bonus harvest of coriander.
“Its other virtue is that the seed is also the spice,” he said. “Keep a little bit to plant next year, and then grind the rest up or use it in dishes for the entire winter.”
The process: Let spring-sown cilantro keep growing until the little berries that follow the flowers go from green to tan to brown. Hold a container below and “just lightly kind of feather the top of those seed heads,” he said. “And if they’re brown and they fall right off into your vessel, then they’re ready to go.”
Peas and Beans, Tomatoes and Cucumbers
Many dry-seeded plants, like peas and beans, practically show you the way: Grow them past eating stage, till they shift color and eventually rattle in their pods. Once harvested and shelled, place the seeds on screens to continue drying.
Tufts of feathery white hairs, or pappus, follow lettuce flowers, announcing seed formation. The only tricky part is how tiny those seeds are. Tip the fluffy heads over a bucket to catch any that are ready; repeat as needed to get those that mature later.
An extra step is advised with wet-seeded crops whose seed is surrounded by a little gel sac, like tomatoes and cucumbers. Fermenting them dissolves the gel.
“Otherwise, you’ll dry it down and you’ll just have a bunch of goo on the outside of your seed that will really easily mold,” said Ms. Jagger.
Their processes are similar, though timing differs. Tomato seed is harvested at the fruits’ edible stage; grow cucumbers until the fruit enlarges and turns yellow or orange, with seed harvested a few weeks after color change.
Squeeze or scoop seedy tomato or cucumber pulp into a container, adding an equal amount of water unless you have a large volume of pulp, and cover it with a screen or loose lid. Place the jar out of the sun to ferment a few days, then skim off and discard the surface mold that forms. The best seeds will sink. Add more water, pour off any floating debris, then wash the seeds in a strainer multiple times before spreading them out to dry on paper or a coffee filter. (The seeds will stick to a paper towel, Ms. Jagger said.)
Ready to Try Your Hand at Onions?
Root vegetables and most brassicas are biennials, requiring more than one season to set seed, so maybe not ideal first adventures. But there is one biennial Mr. Braun hopes even beginning seed savers will try.
If you grew and harvested onions, set aside at least five (25 is better) after they are cured. Refrigerate them inside a plastic bag with holes punched in it for at least 10 weeks to simulate winter, called vernalization. Around final frost, replant them in the garden, at about the depth they were at harvest. They will root, and send up shoots (caging or staking is helpful then), and eventually flower around June, finally setting seed inside little green pods. Harvest when the pods turn beige-brown and start to open, revealing the black seeds inside.
Whatever the crop, the human hand is an influencer in the seed-saving equation. The process of selection — choosing which plants you save seed from — is the foundation of plant breeding, and even the beginner should be mindful of its power.
“Whether or not you mean to when you save seed, you are selecting, and you could inadvertently be selecting for things that you don’t want — harsh flavors, early bolting,” said Ms. Jagger. “If you pick all the lettuce heads that were really beautiful and left the ones that were diseased, you might accidentally be selecting for disease susceptibility.
“So be thoughtful,” she added. “Make sure that you’re saving seed from plants that have the traits you want to allow to move forward.”” [1]
